Add the smoked turkey and cook for 4–5 minutes, stirring occasionally, until lightly browned. If the turkey is very lean, add a small splash of olive oil.
Remove it from the pan and set it aside.
3. Cook the Onion
Add the olive oil and butter to the same skillet.
Stir in the sliced onion and cook for 5–6 minutes, until soft and lightly golden. Add the garlic and cook for another 30 seconds, just until fragrant.
4. Season the Potatoes
Add the potatoes to the pan.
Sprinkle over the smoked paprika, thyme, oregano, onion powder, chili flakes, black pepper, and a small amount of salt.
Stir well so the potatoes are evenly coated with the seasoning.
5. Simmer Until Nearly Tender
Pour in the stock and bring it to a gentle simmer.
Cover the skillet and cook for 15–20 minutes, stirring once or twice, until the potatoes are almost tender. The exact cooking time will depend on the size and type of potatoes used.
6. Add the Green Beans
Stir the green beans into the skillet.
Cover again and cook for 10–12 minutes, or until the beans are tender but still hold their shape.
For softer, more traditional country-style green beans, cook them for an additional 5 minutes.
7. Finish the Dish
Return the browned smoked turkey to the skillet.
Cook uncovered for 5–8 minutes, stirring gently, until the liquid has reduced and the potatoes begin to caramelize around the edges.
Add the lemon juice and chopped parsley. Taste and adjust the salt and pepper before serving.
How to Make the Potatoes Extra Golden
For crispier potatoes, cook them separately for a few minutes before combining everything.
Heat one tablespoon of oil in the skillet and place the potatoes cut-side down. Let them cook undisturbed for 5–7 minutes, until golden. Remove them temporarily, cook the onion and garlic, and then continue with the recipe.
Another option is to transfer the finished dish to a baking tray and roast it at 220°C for 8–10 minutes.
Fresh, Frozen, or Canned Green Beans?
Fresh green beans give the best texture, but other options can also work.
Frozen Green Beans
Add frozen beans directly to the skillet without thawing. They may need only 7–10 minutes of cooking.
Canned Green Beans
Drain them thoroughly and add them during the final 5 minutes. Because they are already soft, adding them too early may cause them to break apart.
Easy Variations
Vegetarian Version
Leave out the smoked turkey and use vegetable stock. Add sliced mushrooms or chickpeas for extra substance.
Spicier Version
Increase the chili flakes or add a pinch of cayenne pepper.
Creamy Version
Stir in 100 ml of cooking cream during the final few minutes. Keep the heat low so the sauce remains smooth.
Oven-Baked Version
Combine the seasoned potatoes, onions, garlic, and stock in a covered baking dish. Bake at 200°C for 25 minutes, then add the green beans and smoked turkey. Continue baking uncovered for 15–20 minutes.
